DIGITAL.NEOSKOSMOS.COM THE WEEKEND NEOS KOSMOS | SATURDAY 25 APRIL 2015 21 way to healthy Psarosoupa (fish soup) A hearty mix of fish and veggies that will boost your system while keeping your calorie intake low Psarosoupa, as the dish is called in Greek, means fish soup. Served warm, this delish and nourishing broth is created by a combination of boiled vegetables and fish. Carrots, celery, leeks and potatoes can offer their aroma to any fish we choose, seafood mix even, and with a dash of olive oil, let us enjoy one of the healthiest and most loved Greek recipes. Ingredients: 600g fish fillets or seafood mix (red mullet, snapper, cod and/or shrimps, mussels, squid) 2 potatoes cut into quarters 1 red onion 1 lee 10 whole peppercorns 3 medium carrots, chopped 2 stalks of celery, chopped 1 leek parsley according to personal liking 1.25 litres water 1 tsp salt 120mls olive oil 1 lemon, squeezed Method: Place the vegetables in a large pot to boil with water on medium-high heat for 15 mins. When you are able to fork the potatoes add salt and boil for another 5 mins. Remove most of the veggies from the pot and add the fish and the olive oil. Wait till the soup comes to the boil. Add the lemon juice and simmer for 20 mins while stirring occasionally. Take it off the boil and serve as you like. Garnish with parsley. Chicken noodle soup. You can also add rice five minutes after you place the fish in the pot, if you want to make your soup even more rustic and filling. Veggie soup Vegetable soup is a way to ensure you are keeping up your suggested fibre intake, not to mention a safe and healthy way to prepare delicious starters or meals that can't go unappreciated. This is probably the easiest dish, which can consist of any group of vegetables the aspiring cook desires. Ingredients: 8 cups water 2 stock cubes (chicken/ beef/veggie) 4 cups broccoli florets 1 large tomato 1 red onion 2 medium size potatoes 1 large carrot 6 cloves garlic 1 tbsp extra virgin olive oil 1 tbsp fresh ginger, chopped 1/2 cup chopped leeks as desired 1/2 cup mushrooms, diced 1 tsp salt 1/4 tsp pepper Method: In a large cook pot, add the water and stock to boil. Place the potatoes, carrot and onion in first and bring to a simmer. Add the broccoli florets, leek, garlic, ginger and mushrooms and simmer again without scorching. After 10 minutes have passed, taste your soup and add the olive oil, salt and pepper. Once everything is boiled (but not melted), remove from fire. You can either dice the vegetables and place them in the soup bowls or mash the contents of the pot till it becomes creamy. Both options are equally gorgeous when served and delicious. Consommé vegetable soup. You can either serve the mix in one bowl or strain the veggies and place them on a separate plate. FOOD Plain chicken soup, in vegetable broth. Super creamy veggie purée. Chicken soup The all-time remedy Whether you are down with a cold or not, a nice, warm and spicy chicken soup is the perfect remedy. Not only for the body, but for the soul as well. Ingredients: 1 kg skinless, boneless chicken breasts 6-8 cups of water 4 medium sized potatoes, peeled and chopped in 2 or 4 1 sweet potato, peeled and chopped 2 large tomatoes in halves 1 medium-sized onion fresh ginger trimmings (optional) 2 1/2 tbsp olive oil 2 tbsp white vinegar 4 diced cloves of garlic 3 celery stalks, chopped 3 cups kale, roughly chopped 1-2 chicken stock cubes sea salt and pepper Method: Place the chicken in a large pot with the water to boil for 10 minutes. Add the vegetables to the pot with the salt, stock cubes and oil. Reduce heat and simmer, skimming any foam that rises to the top, until the chicken is cooked through, about 30 minutes. Transfer the chicken to a bowl and let cool. Strain the broth, discarding the vegetables. Return the broth to the pot. Add noodles to the broth and simmer for approximately six minutes. You can also cook the vegetables a bit more and not add any kind of pasta. When the chicken is cool enough to handle, chop it and add it to the soup. Ladle into individual bowls.
